Angel Food Cupcakes
Ingredients:
- 1 cup cake flour
- 1 1/2 cups granulated sugar
- 12 large egg whites, room temperature
- 1 1/2 teaspoons cream of tartar
- 1/4 teaspoon salt
- 1 1/2 teaspoons vanilla extract
- 1/2 teaspoon almond extract
- 1/4 cup powdered sugar for dusting
- Fresh berries optional, for garnish
Instructions:
Warm your oven up to 350 ?F 175?C and put paper liners in a cupcake tin
Pulse cake flour and granulated sugar together in a food processor until the flour is very fine and the sugar is well mixed in
Beat egg whites in a large bowl until they foam up
Then, add cream of tartar and salt
Keep beating until you get soft peaks
As you keep beating, slowly add the almond and vanilla extracts until stiff peaks form
Fold the flour and sugar mixture into the egg white mixture very slowly so that the egg whites don't lose their shape
Fill up each cupcake liner about three quarters of the way to the top with batter
Place cupcakes in an oven that has already been heated
Bake for 18 to 20 minutes, or until they are lightly golden and a toothpick inserted into the middle comes out clean
Take the cupcakes out of the oven and let them cool in the pan for a few minutes
Then, move them to a wire rack to cool completely
Once they are cool, sprinkle powdered sugar over the tops and, if you want, add fresh berries to the top
