Grilled Peanut Butter Chicken



This Grilled Peanut Butter Chicken is a delicious twist on traditional grilled chicken, featuring a flavorful peanut butter marinade that adds depth and richness to the dish. It's perfect for a quick and easy weeknight dinner or a backyard barbecue.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/4 teaspoon crushed red pepper flakes
  • Salt and black pepper to taste

Instructions:

To make the marinade, mix peanut butter, soy sauce, honey, garlic, ginger, and red pepper flakes in a small bowl with a whisk

Add salt and black pepper to the chicken breasts

Put the chicken breasts in a shallow dish or a plastic bag that can be closed again, and pour the marinade over them

Cover or seal the bag and put it in the fridge for at least 30 minutes, or better yet, overnight

Warm the grill up to a medium-high level

Take the chicken out of the marinade and let the extra drip off

Grill the chicken for 6 to 8 minutes on each side, or until it's fully cooked and the juices run clear

Use the rest of the marinade to baste the chicken every so often

If you want, you can serve grilled peanut butter chicken with chopped peanuts and sliced green onions on top
