Mushroom Leek Winter Soup
A comforting vegan soup perfect for the winter months, filled with hearty wild rice, earthy mushrooms, and flavorful leeks.
Ingredients:
- 1 cup wild rice
- 2 tablespoons olive oil
- 3 leeks, thinly sliced
- 3 cloves garlic, minced
- 8 cups vegetable broth
- 1 pound mushrooms, sliced any variety you prefer
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish optional
Instructions:
Run cold water over the wild rice to clean it
Set the olive oil in a big pot over medium-low heat
Put in the garlic and leeks, and cook for about 5 minutes, until the leeks are soft
Fill the pot with wild rice, mushrooms, thyme, and rosemary
Then add the vegetable broth
Add pepper and salt to taste
Once the soup starts to boil, lower the heat and cover it
Let it cook for about 45 to 50 minutes, or until the rice is soft and cooked
Taste the soup when it's done and add more salt or pepper if you think it needs it
If you want, you can serve it hot with fresh parsley on top
