Ingredients:
- 1 block tofu, pressed and sliced into strips
- 2 tablespoons soy sauce
- 2 tablespoons maple syrup
- 1 tablespoon smoked paprika
- 1 tablespoon olive oil
- 1 cup shredded cabbage
- 1/2 cup shredded carrots
- 1/4 cup shredded coconut
- 1/4 cup chopped cilantro
- Juice of 1 lime
- Zest of 1 lime
- 2 tablespoons coconut milk
- 8 small tortillas, warmed
- Salt and pepper to taste
Instructions:
Preheat oven to 375F 190C
In a small bowl, mix soy sauce, maple syrup, smoked paprika, and olive oil to create a marinade
Coat tofu strips in the marinade and place on a baking sheet lined with parchment paper
Bake tofu for 20-25 minutes, flipping halfway through, until golden brown and slightly crispy
In a large bowl, combine shredded cabbage, shredded carrots, shredded coconut, chopped cilantro, lime juice, lime zest, and coconut milk
Mix well
Season coconut citrus slaw with salt and pepper to taste
To assemble tacos, place a few pieces of baked tofu on each warmed tortilla and top with coconut citrus slaw
Serve immediately and enjoy!
