Gluten-Free Pineapple Cashew Cauliflower Rice with Coconut Milk
This gluten-free dish is delicious. It has the tropical flavors of pineapple, the creaminess of coconut milk, and the crunch of cashews. This dish is gluten-free and good for you because it has cauliflower rice instead of regular rice.
Ingredients:
- 1 medium cauliflower, grated into rice-like texture
- 1 cup pineapple chunks, fresh or canned
- 1/2 cup cashews, roughly chopped
- 1 can 13
- 5 oz coconut milk
- 2 tablespoons coconut oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon ginger, grated
- 1 teaspoon turmeric powder
- Salt and pepper to taste
- Fresh cilantro leaves for garnish
Instructions:
Put the coconut oil in a large pan and heat it over medium-low heat
Cut up the ginger, garlic, and onion and add them
Add the onion and cook it until it turns clear
Add the diced red bell pepper and stir it in
Saut for another two to three minutes, until the pepper gets soft
Put the turmeric powder and grated cauliflower in the pan
For about 5 minutes, stir the cauliflower as it cooks until it gets soft and starts to turn golden
Add the pineapple chunks and coconut milk
Mix things together well
Add five more minutes of simmering time to let the flavors mix
Add pepper and salt to taste
Add the chopped cashews on top, and then add some fresh cilantro leaves on top of that
