Granola Pumpkin Maple Muffins



With pumpkin and warm spices, these vegan Granola Pumpkin Maple Muffins are the perfect mix of comfort foods. With the crunchy granola on top, they're a tasty and filling treat that's great for breakfast or as a snack. Plus, they don't have much fat, so you can enjoy them without feeling bad!

Ingredients:

  • 1 cup whole wheat flour
  • 1 cup oat flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 cup pumpkin puree
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • 1/2 cup vegan granola for topping

Instructions:

Warm the oven up to 190C 375F

Put paper liners in a muffin tin or grease it well

Put sugar, baking powder, baking soda, cinnamon, nutmeg, salt, whole wheat flour, and oat flour in a large bowl

Mix them together with a whisk

Put the pumpkin puree, applesauce, maple syrup, almond milk, and vanilla extract in a different bowl and mix them together until they are well mixed

Mix the dry and wet ingredients together until they are just barely mixed

Be careful not to mix too much

Fill up each muffin tin cup three quarters of the way to the top with batter

Spread the granola out evenly on top of the muffins and press it down a little to make it stick

Put it in the oven and bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean

First, take the muffins out of the oven and let them cool for 5 minutes in the pan

Then, move them to a wire rack to cool completely
